Natural

The beans are dried on concrete patios, naturally exposed to the sun, manually turned several times a day for slow and uniform drying. After resting in storage bins, they are hulled, resulting in coffees with a good body, pronounced acidity, and a smooth aroma.

Peeled Cherry

The beans are hulled shortly after harvest, partially removing the mucilage, and then subjected to a drying process. This results in smooth coffees with low astringency and a pleasant finish.
